Cocoa nib Panacotta with spiced plums

Ingredients:

Cocoa nibs    50g
Cream        500ml
Milk        170ml
Vanilla pod    1
Sugar        100g
Leaf gelatine    2 ½

Method

  1. bring cream, milk, sugar and vanilla to a boil
  2. soak gelatine in cold water to soften
  3. squeeze the water out of the gelatine and add to liquid
  4. strain and pour into moulds and place in the fridge until set

Spiced plums

Ingredients:

Plums    2
Sugar        100g
Red wine    100ml
Water         100ml
Cinnamon    1
Star anise    1
Bay leaf    1
Black peppercorn  5

Method

  1. Bring all ingredients up to a boil
  2. Add plums and slowly poach until tender
  3. Take some of the liquid and reduce down to a syrup
