Cocoa nib Panacotta with spiced plums
Ingredients:Cocoa nibs 50g
Cream 500ml
Milk 170ml
Vanilla pod 1
Sugar 100g
Leaf gelatine 2 ½
Method
- bring cream, milk, sugar and vanilla to a boil
- soak gelatine in cold water to soften
- squeeze the water out of the gelatine and add to liquid
- strain and pour into moulds and place in the fridge until set
Spiced plums
Ingredients:
Plums 2
Sugar 100g
Red wine 100ml
Water 100ml
Cinnamon 1
Star anise 1
Bay leaf 1
Black peppercorn 5
Method
- Bring all ingredients up to a boil
- Add plums and slowly poach until tender
- Take some of the liquid and reduce down to a syrup
