Thai green curry mussels
Ingredients:
Mussels
Ginger
Lemon grass
Green curry paste
Coconut milk
Lime leaves
Coriander leaves
Fresh lime
Method:
- Heat large pot, sweat off ginger, lemon grass, lime leaves and thai curry paste.
- Add mussels and a little water, cover with a lid and shake well.
- When mussels start to open add coconut milk and bring to a boil.
- Pour into a large bowl and season with chopped coriander and lime juice.
