Here in The Butler’s Pantry, we have been counting down the days to the most joyous Tuesday of the year! Pancake Tuesday is upon us and we’re looking forward to piling our plates high with our delicious thin crepes smothered in both sweet and savoury toppings.

The Meaning behind Pancake Tuesday

Shrove Tuesday (as it’s more formally known) falls forty-seven days before Easter and on the day before Lent begins. The beginning of Lent is on Ash Wednesday. Christians traditionally fast during Lent until Easter. The word shrove comes from shrive, meaning to present oneself for confession, penance, and absolution. At Easter, Christians remember the Death and Resurrection of Jesus Christ.

Tradition has it that in the past, people would need to use up ingredients in their kitchen ahead of the fasting. As eggs, milk, and flour are staples in most kitchens, making pancakes was the perfect way to use them up and enjoy a delicious feast!

 

How to Make the Perfect Pancake

Our chefs find this classic French recipe gives the perfect result. This recipe yields approximately 12-15 crepes of about 6 inch diameter.

INGREDIENTS

  • 125 ml cold milk
  • 125 ml water
  • 2 eggs
  • 90g plain flour
  • 1 teaspoon sugar (omit for savoury pancakes)
  • ½ teaspoon salt
  • 2 tablespoons melted butter

METHOD

  1. In a mixing bowl, whisk milk, water, egg and butter together. In a separate large mixing bowl, mix the flour, sugar and salt together. Pour the wet ingredients into the dry ingredients slowly, whisking constantly until everything is incorporated. Ensure that there are no lumps in the batter. The crêpe batter should be just thick enough to coat a spoon. If you find the batter too thick or heavy you can whisk in water, tablespoon by tablespoon.
  2. Cover the mixing bowl with cling film and place the bowl in the refrigerator for at least 2 hours. This allows the flour particles to expand in the liquid which will yield a tender and light crêpe. The batter can be made the day before and kept chilled until ready to use.
  1. Heat an 8 to 10-inch frying pan over medium heat.
  2. Brush a thin layer of softened or melted butter on the frying pan. Give the batter a whisk to ensure that there are no lumps and scoop up approximately 60ml of batter using a ladle.
  3. Hold the frying pan in your dominant hand and pour the crêpe batter into the middle of the pan with another hand, tilting the pan in all directions as you pour (the batter should set almost immediately as you pour in the batter) so that the batter coats the bottom of the frying pan in a thin layer.
  4. Cook for about 30 seconds until the edges begin to brown, then loosen the crêpe with a spatula and flip to the other side to cook for another 30 seconds. Transfer the cooked crêpe onto a plate. Repeat until all the batter used up.

Co-founder and chocolatier of Arcane Chocolate Erik Van der Veken has created an exclusive selection of chocolates named ‘Forbidden Love’ for The Butler’s Pantry for Valentine’s Day. Erik has named the chocolate range after a real life forbidden love that played out with a Saudi Arabian woman while he was working there. This relationship led to some complications in a still very conservative country. Ultimately Erik and his partner decided to move to Ireland in order to live their life together on their terms

For this selection of chocolates, Erik has sought inspiration from ingredients, spices and herbs with romantic properties. Within the box you will find 4 unique and delectable chocolates, handmade by Erik:

  • Chocolate filled with ganache made with a fruity and floral 75% couverture with all the cacao coming from Tanzania, rich in polyphenols and antioxidants;
  • A chocolate with a soft strawberry caramel topped with a ganache and perfumed with Damask rose and Tahitian vanilla;

Pizza…the ultimate comfort food. Cheesy and absolutely delicious, it is hard to say no to.

Created in Naples in the 18th century, pizza became a worldwide phenomenon after World War II, when soldiers stationed in Italy brought word of the carby deliciousness across the globe. It was only a matter of time before this food – traditionally for the Neopolitan poor and topped with whatever ingredients were seasonal and to hand – took the world by storm.

Here at The Butler’s Pantry, we are thrilled to sell our very own pizza sauce – that can be used on our selection of fresh pastas as well – made by hand by our chefs, with only the best ingredients. Pair this with Sorrento Pizza Bases, found in our chilled sections, to make a fantastic pizza at home. Sorrento Pizza bases are made by Master Baker Giorgio Lisi in Dublin. Lisi grew up in Sorrento, Italy, and learned the art of creating pizza from his father and grandfather. He has put his expertise to good use, bringing Irish customers his delicious (and vegan) pizza bases.

Perfect for filling up on cold days

Having a busy job in The Butler’s Pantry Sandycove, I am always eating my lunch on the go! It’s always so exciting to try the new innovations that come from our kitchens in Bray. January brought a lot of delicious and healthy products in our Feed Your Resolution range. One of these was our new Asian Noodle Broth which I recently tried for lunch. When heated in the microwave, I was very pleased with the result. It was a cold day and a good soup was exactly what I needed. This particular soup was beautifully light, while still being warming and nutritious. The pak choi added some beautiful texture and freshness to the dish, the carrots and peas added fantastic hints of sweetness, and the flavours of lemongrass and ginger came through wonderfully. However, what surprised me was how full I felt after my meal.

Eat it out or take it home

I enjoyed it so much that a few days later I took a pot home and heated it in a saucepan. I must admit, the flavours came through even stronger, and by putting it in a bowl the noodles were far easier to manage!

As nice as it was in the pot, this was a real treat of a meal in a bowl that I will be eating over and over again.
