Champagne, France – Chardonnay/Meunier/ Pinot Noir– Alcohol 12.5%
Cyril Bonnet is the 6th generation of this family Grower Champagne, in charge of about 10.5 hecatres of vines divided in equal proportions between Chardonnay, Pinot Noir and Pinot Meunier, converted to organic viticulture under his mantle. This wine is a montage of those 3 grapes across different Premier Cru plots in the western part of the Montagne de Reims, with Pinot Noir leading the way. Generously, this contains about 40% of the perpetual reserve (or “taste memory”) that was started by Cyril’s father 50 years ago, which gives the wine extra depth and complexity. Aged for 4 years on the lees and finished with a very low dosage (added sweetness), this is a rich and almost autumnal wine – red stone fruits and baked apple, walnuts and baking spices – a wine to be drunk and enjoyed, with or without an excuse!
Extra Brut means little added sweetness, which means this is a “stretchy” wine, it can take on sweetness from food – cue sweet savoury cured meats and dried figs, sweet caramlised pan fried fish and proper chips! Fish and Chips for the wine!
